| Ahhh - we've wanted to visit Polyface for a while now... |

| Love the hoophouse concept - rabbits, chickens, and pigs are in here during the winter months composting a carbon material (wood chips, etc), then most of the compost is removed (it went up to the top of the boards) and spread outside. Crops are then started early spring - everything from tomatoes, peppers, carrots, beets, lettuces, peas, etc....They look great! |

He is an expert in biodiverse and "beyond organic" farming. Loved being here... Afterwards, we visited his restaurant marketer's family farm to see their Dexter cattle which we are very interested in. |
